I would ideally like to be as self sufficient as possible, so how much space do you reckon I need to grow everything or almost that a family of 3 needs? Or, I am hoping to have a 14ft x 28ft polytunnel, with 2ft wide beds down each side and a 4ft wide bed down the middle. Plus I gotta fit about 3 ibc's in somewhere. Will that be enough space? Thanks!

It depends.

Since you are in the UK you are not likely to get masses of growth over winter so do grow all your own food you would need a really large system but then you would have a huge surplus over summer.

I have wondered about this, but would like to do as much as possible anyway. I want to learn about how to preserve food so that when I do have excess I can put it aside for colder times, and if I do have too much I'm happy to give away to neighbours/friends etc.

I've got an ~100m2 greenhouse and it produces more than we can eat in summer and is a big job to preserve but not nearly enough in winter.

It really comes down to your available resources (space, money, time, material, etc.)

In that case the question to answer is not how much space you need but how do I afford a 100m2 system.

Alternatively how much money do I have to devote to this.
