has anyone tried growing amaranth greens in their AP setup? I've only seen the plant being grown for it's grains, but have heard great things about the health benefits of eating the greens. It does well in hot temps, so it would be a good choice for where I'm located heading into the summer months. Anyone have any experience with it? |

Should grow well. Grows like a weed everywhere in my dirt garden. We eat it all the time and the cooks love it. Don't let it go to seed in your AP bed. You will forever be pulling out the seedlings. It can be quite invasive. |

you are talking about the greens right? Because if I were to let it go to seed, that would take much much longer than the cycle I am looking to grow them for. Sorry, I should of cleared that up in the original post. I read somewhere that you can grow and harvest them in 30 days as young greens, much like spinach, kale, or arugula. How's the taste? |

Yeah amaranth greens. We have the red and green variety. It tastes good. If you like asian greens like kankong you should like amaranth. We have it in soup or stir fried with chilli and garlic. It grows quickly and produces thousands of seeds. As i said it can be invasive. |
