Here is one of our family favourites, quick, easy, cheap and yummy, Oh did I mention healthy too? CREAM OF BROCCOLI AND CAULIFLOWER SOUP Ingredients 2 Tablespoons of olive oil Finely chopped onion - can substitute chives, spring onions etc 5 cups chicken stock 1/2 broccoli 1/2 cauliflower salt and pepper 1 1/2 cups grated tasty cheese 3/4 cup cream Heat oil and add onion, fry gently for a few minutes, add chicken stock followed by chooped broccoli and cauliflower. Simmer for1 hour. Then cool for 10 minutes.Season with salt and pepper to taste. Add cheese and cream and serve with crsuty bread. The flavour is similar to cauliflower cheese. Enjoy! |
