I let beans dry in the pod on the vine, which works well unless there is too much rain.

The bought ones have thyrum on them, so just be happy with the 50%, after all, it is easy to collect plenty.

I always do with things like peas and beans. Much easier to thin them out than to fill the spaces and have these plants starved of sun by the more mature plants.

Whats the best way to dry and store seeds? My beans have around a 50% germination rate compared to 95% for packet ones.

With seeds like beans and peas......let them mature & dry in the shade, low humidity is important! To check if they are dry enough....crush one.... should be hard enough to grind into to a flour. You could store them in an airtight jar for several years. I have better germination with the above .......95%. Just remember .....if there is any moisture in seeds and you put them into anything airtight they'll go bad very quickly (mildew).
Seed like garlick (they have moisture in them) or bulbs let them dry out (the outer skin) put them in a paper bag, store cool. & dry - - don't use plastic bags.

I have been drying all my seed on the kitchen window sill, it looks out onto a fully covered area, so gets no sunlight.

Just watch out for mice. They like seeds too. Reminds me I've dragon fruit seedlings on a window sill somewhere. To anyone that likes this expensive fruit it will grow from the seeds. Was a surprise when I threw them into a tray, didn't think it would grow from the fruit seeds being a cactus I was just expecting it to be grown from cuttings.

Cuttings is certainly the easy way to go though - and bloody quick to get a plant fruiting.

I save seeds too :)

from almost anything ( citrus to corriander[cilantro] capsicum to chillies )
and almost anything that i have found l that has seeds on it if i like the plant or fruit

seed collecting or saving is the best way to get a whole garden going ( especially veggies ) for next to nothing

and the compost and worm farm i have found are the next best thing to AP for being organic ( or as close as you can get these days )

All should be seed saving, but only if the variety is traditional/heirloom --
non-hybrid seed saving is a pointless exercise.
