I planted the culinary ginger flat-ways, just under the surface of the gravel. In fact, you could just see a little of the top of the root. So I think the bottom third of it got wet with every flood.

Unagi is freshwater eel, but is darned well cooked by the time we see it as sushi.

Can't go far wrong trying your fish as sushi; there probably won't be any parasites that would harm you, unlike wild fish.

I was thinking of purging the the Tilapia in a separate high saline pond for say 5-7 days. I've heard this improves the taste as well as purging. I am in the planning stages for a large (100MT PA) marine finfish grow-out farm and the Kob (Mulloway) are grown at very low salinities, but near harvest they are purged at high salinities.

Yep, metric tons, 100 000 kg pa, but I am battling to get a permit, otherwise everything else is in place.
