Stick with this feed level till ammonia and nitrite return to 0, then increase feed again and keep checking the levels to make sure it doesn't spike and continue increasing feed that way till you are feeding enough that the fish don't finish it all off in a 15 minute period. While doing this keep a close eye on things, if uneated food starts building up in the fish tank, back off feed. Solids building up in the fish tank are very dangerous for trout.

Definitely do the high range pH test as well. Since my pH usually hangs out right near 7.6 I usually have to do both tests all the time to be sure of the pH.
