Just Googled a little bit, it's really interesting to see that people are breeding them in indoor caged areas, I had thought they only bred in warm weather and needed like several meters of height to do it. Might be possible to get them going this year and keep them going through the Winter.

You won't get breeding unless their temp, humidity, and light requirements are met. This applies to both indoor and outdoor.

What's the best thing to do with mature grubs if you want them to pupate to make more fly? Let them go to ground? Is there a way of protecting them from birds?

Yep, you have to toss them onto some non-compacted soil and let them burrow to hibernate for next season. Not sure what to do about the birds

Yep, the guys doing it in cages and indoors heat their cages etc.
