Can't help you on this one except to say that the European bullhead is a different genus from the American version so you'll want to know which fish anyone is talking about.

I'm thinking the Kissing Gourami is a tropical so you may want to check on the acceptable temperature range for these.

Carp is full of bones so I hear. Catfish yields tasty boneless fillets. I have never experienced the "muddy" taste that others describe, though people that usually don't eat catfish have eaten mine and said it doesn't have the "muddy" taste. I raise channel catfish and tilapia. I think I like the tilapia better, though it's been a year since I had catfish. The current batch isn't up to size yet.

I have four ponds full of bullhead catfish, I have large man made clay ponds built around 20 years ago for 4 of them and the fifth right behind my house was made about 43 years ago. I do not feed any of the fish that I have they just live naturally off of what is in the ponds and bugs and wahtnot and my fish taste great, in fact I prefer the flavor of them over my large mouth bass.

One complaint that I have with the bullhead catfish is the small size, it takes a few to make a decent meal and it is a bit of work fro not a lot of meat, but again they are quite tasty.

One thing about carp is that from what I have seen they will get quite a bit large than a bullhead catfish, more meat per fish. I eat mostly bass largely due to the fact that I can catch a large bass from pond 18 to 22 inches and make a meal from one fish where I generally have to catch half a dozen bullheads to get a meal.

I don't know a lot about it but some pond management might help turn that around? Could just have too many catfish that they are stunted or maybe switch a pond to channel cats and see if they do better or something?
