How long do trout take to grow from small when you buy them to the size when you can eat them ?

I actually worked in a trout hatchery, I'd say a little longer. It's always a balance between input and output. We stocked then in about 5-6 months

Mine went in early May '15 as fingerlings (when you buy them) and I harvested 3 +500g fish last week

I got mine as 15-18cm yearlings in late March and had first plate sized harvest ( ~27cm & 300g gilled & gutted) in late July. The 10 I have left are 32-35cm and +500g cleaned.
