So just to clarify:
I have been given a vacuum sealer, do i gut the trout with head on, seal them, they freeze?

Gut and gill and either straight vac seal or brine and seal. I prefer the brine before smoking or sealing.

It's all personal preference really ;)

If you are not short of freezer space, sure.

There is tasty meat on the had particularly the cheek which I love. My step mum always claims the head of a fish that we have cooked.

Trout don't have scales worth worrying about... I don't bother... and haven't ever noticed them

I'd do a brine with a mixture of water, salt and brown sugar. You can add other things to this to create a marinade or whatever to your liking.

With the weather warming in perth i pulled my remaining 34 trout today.

I do not want to see anymore fish-guts for a while! :drunken:


this year i used a fish feeder (made from an old catfeeder) to feed them. The largest was 650 g and the smallest ~400g.

Last year i fed by hand and the largest was ~800 g and the smallest 200g.

Seems as if the consistent feeding regime produced more uniform trout size.

Smoked one this evening :D

hi Gabe,

thats seems quite early with only 1 23 degree day so far, how are your water temps? also whats the plan now? are you going to put any fish in or wait until it warms up for Barra?

May be a bit premature... mine was starting to creep up, but in the last three days it's dropped from 20.5C down to 18.4C... fish are eating really well again.

Here's a few I harvested on Saturday, random dip, largest went 501gm gutted and gilled.
