KE- last lot of fingerling( end of march) I got that were no more than 80 mm were small herring size within about 4 months. Just culling the larger ones to eat, the next larger would step up as the more agressive and bulk up quickly.

Mostly I smoked them (maximum use), mind you , you have to try hard to get a paper around them...hehehe

I would season them and used selected wood shavings...

Friend of mine refurbs wine barrels and sells the shavings to a smoke house or two in the district...choice of red and white...

do like chilli and coriander and lime...

trouty will have other ideas no doubt

Im with you all the way on this one C1. I wont eat a trout unless its smoked. I havent ever tasted one smoked with wine barrel shavings, must try that one day. I usually just use Jarrah, Karri or Mallee as all the people I know with wine barrels still have them full of wine!!

The time to buy the fingerlings is now through till May. If you feed them the high protein (45% protein) pellets you can get them up to 300gm in the spring time and then start eating them through till christmas (when your water temps may get too hot) where some of them could reach 500gm!!

What did you feed your trout C1??

This is the net basket I was thinking of. It's 480mm high x 440 diam.
I think this one came from Ikea but I've seen similar at various shops.
