Quick answer : Tadaa !!!
Show qualitry Koi.
Hand picked breeders, pairings for particular results, cull the young heavily as YOY fingerlings and raise culls out for Oriental Fish markets or just Oriental markets, the sale of these alone will pay your expenses, then photograph your color groups and list on ebay. pack with 02 and ship yourself, you are looking at $50 to 100 ea. More depending on size.
Next category would be quality cut-throat trout fingerlings for breeding stock, a dozen subspecies to choose from and you'd be doing a great conservation service.
Next would be Channel Catfish, for producing growth selected breeding stock. After a couple breeding seasons you could get $2.00 ea for selected fingerlings. One good pair will give you a couple thousand fry. You can easily baby and keep ten to 20 pairs.
Not too shabby.
In other species, pick ones you like and over several seasons pick one or two and select for growth. The coefficient for growth is very high in all fish families. Large parents produce fast growing offspring. Improved breeding stock sells, whatever the species.
Enjoy,
