A place to discuss aquaponics

Lots of eggplants and peppers. Sauteed in EVO, then caramelize some onions, add honey & vinegar. Put on top of toasted Italian bread, top with a thick slice of Mozzarella and broil. mmmmm.
Other was a eggplant and zucchini dish with layers of tomato sauce(homemade) and fresh Parmesan and Fotina cheese. I think next time, we'll add bread crumbs or even Chinese noodles to add some crunch. Still good.
