Found this DIY recipe for Medium PACE Picante Sauce:

1 (28 ounce) can tomato sauce 28 ounces water 1 medium yellow onion, minced 2 fresh jalapeno peppers, with seeds,minced 1/4 cup white vinegar 1 teaspoon salt 1 tablespoon dried onion flakes 1/2 teaspoon garlic powder Directions: 1 Bring all ingredients to a boil in saucepan over med-high heat. 2 Reduce heat and simmer for 30 minutes or until thick. 3 Remove from heat and cool. 4 Store in an airtight jar in refrigerator until serving.

Anyway I would like to completely use AP produce when possible.

Can anyone suggest substitutions for the canned tomato sauce? Cooking down tomatoes? Reducing the added water by water in fresh tomatoes?

Anyone have a favorite mild or medium salsa recipe?

Cook down the tomatoes with a little chicken stock (powdered instead of using salt) and pepper (perhaps a pinch of raw sugar if the tomatoes are not sweet enough)then add water afterwards. it takes a lot of tomatoes though. It tastes better than only part reducing them.
