That is a good forum. Here is a good one for sausage making http://forum.sausagemaking.org/index.php An old refrigerator makes a great smoker and are usually easy to find. I have a little elec. smoker for fish, sausage, jerky and other meats. It doesn't get above 160 f. I've had various wood/charcoal smokers but they get too hot and are not good for jerky and fish. Then you have the smoker that have a separate heating area and only the smoke is put to the meat. Trout is awesome smoked. Stick with oily fish and they are all good. The only way to eat that steelhead(large rainbow) eriktlupus put up is smoked.

What is gravy beef? Like hamburger? The salami recipe is made from ground meat. I have meat grinders so I do it all myself. You could use 1 part ground pork to 4 parts ground beef.

If you have a grill it can be used to smoke. Put the meat up high on one side and a burner/charcoal on low on the other side for indirect heat. Cover the grate with foil and crack the lid to adjust temp. Soak the wood chips in water for a few hours/days. Dead twigs from fruit trees will work in a pinch. Wrap the wood in foil and poke some holes in it to let the smoke out and place it over hot area. This method works well for whole chooks also.

If you are not familiar with cures google it. The cure keeps it from spoiling when cooked low and slow. It also makes it tacky and gives it the texture for salami. Here is some good info

Wow ! thanks for the share.

Love the shade cloth at the end there and the use of pots in the gravel guard for herbs. I would watch your oragano in the growbed as they are invasive.

Passionflower? that looks like a different variety than the normal one we grow (black fruit) - is it a banana passionfruit?

flaxseed lettuce looks interesting.

broccoli leaves you can eat - but not too much as they are high in oxalic acid.

Peppers - yeah I had trouble in my system - they are pretty fussy in soil at time also - need heat to do well - like eggplants.

The oregano were cuttings but have not transferred to dirt well so I am kind of crowding them to grow up and not fall to media and root.

The passion is a flowering type. It has very small fruit but they are kinda hollow and I have never ate one. The flowers are awesome and it's easier to manage than the big fruiting type. I wish the big fruiting type would grow in my climate.

The lettuce is blackseed and supposed to be a little more heat tolerant so I have it for backup when the romaines bolt.

I have been trimming and eating the broccoli leaves. I think they're better than kale or chard stir fried. I wish they would head up cause they are hogging all the room.

Peppers are always a pain.

The head did not get very large. The plant itself got huge. I did not count the days weeks or months to grow, but Dipel was sprayed on regularly to fight caterpillar damage. I am not sure if I am going to grow it again. I love the idea of it, but it is a lot of work for such a little payoff.
