Maybe see if you could visit some our the members from BYAP forum.
I'm sure there would be some members in your area that wouldn't mind having 200 school kids trampling through their back yard. maybe not such a good idea. Needs work

How many students do you have and what age group?
Could go to a farm that grow produce in the ground ( see the alternative to ap point out the pros and cons )

Maybe try and get into contact with Citizen peng:
http://www.youtube.com/channel/UC5zfNTsLJItgpETSWWMstVg

I'm pretty sure he's in Victoria (no idea where in victoria), but I'm sure he's the sort of guy that'd happily have them there, and would love showing kids all his fish/eggplant. And the system is big enough to be impressive.

There is a large community garden type project in Melbourne that's got an aquaponics section, it may have even been attached to a TAFE campus or similar from memory, it's been discussed on the forums a few times... just can't recall the name of it.

CERES is the one I think your thinking of:

Also for a traditional farm...these guys got a stack o cash from the state government not so long ago for a whole stack of new spiffy stuff.
