If the edited "signature"shows in your profile when you go to re-edit, then I think it's fine....
You just might have to "tick" the "Attach signature" box..... like the one to the left of where ypu post a quick reply.... or in the profile

G'Day, Every time I edit my profile and try to add a signature, I update my profile and everything works ok, except that my signature entered in the box is ignored and dropped. When I edit my profile, it has a signature text box. It is empty I add text I hit 'Update Profile' I edit my profile again. Box is still empty.
