I have an odd problem. I just tested my new system for the first time today. As expected PH, Ammonia and Nitrites were all where you expected them to Be. The Nitrate levels tested between the 80 and 160 PPM colors on my API freshwater text kit. I ran the test three more times to make sure it was accurate. then Out of curiosity I tested drinking water from the faucet and got the same results. I know this is unhealthy to drink but what does this mean for my Aquaponics system? I'm assuming that it is good for a start.

I'm sure the source of the Nitrates is all the farming and livestock in the immediate area. considering that this is a heavily agricultural area.

It's not a concern that your source water tests so high in nitrates.. from a plant perspective...

From a human drinking water perspective might well be another story...

If, as you say... it reflects contamination from farming and livestock in the immediate area.. then it might be wise to get a water analysis done.... who knows what else might show up...
