If one would to supply salad green to 200 people day in and out, in USDA zone 9b, with green/shade house. How big or how many grow beds would one need? Thanks

I am thinking of DWC for most leafy green and media bed for others. May look into Koi as there's a big market for Koi in LA. There may be a demand for spinach, so may be a dedicated hydroponic for spinach?
