A valid point... yet--

Once you have a valid produce department... expansion of that produce production seems the next step... clearly, one is dealing with the market... but again... once your produce is working... why not add another line. Or... six? The visitor said they had a choice... either add a filter, or reduce fish.

Why not 'grow beds' instead of filter? Are they limited by space? They're leasing the property... maybe there is no where to go? Even if the extra is going to, say, food banks... it seems a shame to waste the system. A food bank wouldn't be outrageously 'profitable', but it could provide a massive tax write-off. Worth it? Who knows. It might spread the word... and eventually open markets.

They do have some vertical space...

Do we think long term, or short and strictly profitable?

The thing that most people fail to grasp is how long it took for soil based agriculture to get as far as it has gone. It was discovered approximately 10,000 years ago, and only became what we know it as about 120 years ago or so. During most of that time share cropping was the most viable system. Not perfect, but it worked.
