I seeded too many rock wool cubes for my raft and grow tubes. Rather than trying to peel the rock wool away from lettuce roots, can I simply plant the extra cubes in my flood and drain media bed?

Yes it works...
You just have to find the right depth : Too high they dry, too low you risk rotting.
