IMHO That is mainly dependant on your location and finances.

One large FT is easier to keep stable in terms of water temps and chemistry. Probably more energy efficient in terms of power and capital costs.
On the downside if something goes badly wrong it means your whole operation is stuffed.

1 large and 1 small seems to be consensus amongst the veterans. But some have 2 main systems. The small one is used as a hospital system, or quarantine for sick fish. Whilst all is going well it is often kept going with humonia.
