The ammonia is in suspension (therefore mixed) ... the nitrite/nitrate process is taking place in a very thin film of water that surrounds your bio-filter medium....

In our case, usually the gravel or clay balls in the growbed....

Some nitrite/nitrate may/will be released into suspension... depending on the balance of the system at that particular moment in time...

Ammonia can get gassed off so would it be more concentrated towards the surface. Also in my tank its 2m ish deep and the fish like to be on the bottom. This could be because of temp or is it less concentrated at the bottoms of tanks. Might have to do a comparison test on the pool.

Off gassing of ammonia (at normal AP concentrations) would be so neligible as to be essentially non existent Duff....

At 2m... then there will very probably be a temperature differential in the pond.... but unless your ammonia levels were excessive, then I doubt that you'd be able to measure any difference between levels...

And if your ammonia levels were high enough to do so.... then your fish would probably already be dead....

And if you could/did measure a difference in ammonia at certain levels.... it would suggest that you needed to "mix" your water volume.... mainly because, I suggest, that there'd also be an acute O2 deficiency problem...

To be plain... in a normal AP system.... ammonia, nitrites, nitrates and oxygen will be diffused throughout the entire system....

It's just not a problem.... unless there's something really weird going on in your system...

And if your see the post I'm about to make in my "small" AP system thread... you'll see what I mean...

Was thinking more of the nitrite levels in the pool. I pump from the bottom of the pool into the GB's. The Am is converted to nitrite and back into the pool unless the bacteria is fast enough to convert from Am to Na in a single pass. But the pump and GB would have to heat the water a little so that would mean that the return water will stay higher in the tank. So if I get a nitrite reading of 1.0 then it might be different for the bottom half of the tank. Pool is 55kl and there are 50ish fish.

50 fish in 50kl.... I'd be surprised if you got a reading for anything...
